Chicken production 2019: less eggs for hatching, more slaughterings

Vienna, 2020-01-31 – In 2019, hatcheries subject to reporting requirements reported a total of 125.3 million chicken eggs for hatching, according to Statistics Austria. This represents a decrease of 3.0% compared to the previous year. The number of eggs for laying breeds decreased by 4.6% to 23.3 million; eggs for fattening breeds declined by 2.6% to 102.0 million.

Accordingly, the number of hatched chicks for laying purpose decreased to 18.7 million (-2.7%) in the same period, while those for fattening purpose amounted to 81.6 million (-1.7%; see table 1).

Furthermore, slaughterhouses subject to reporting requirements slaughtered 90.7 million chickens in 2019, by 5.8% more than in 2018. The volume of chicken meat in processing form reached 115 500 tonnes, 5.4% more than in the previous year. With 44.2% of the total slaughter volume (2018: 46.2%), the major processing form was "meat, parts" (see table 2).

Information on methods, definitions: In accordance with Federal Law Gazette II No. 356/2003 (in the version currently in force), all slaughterhouses with at least 5 000 poultry slaughterings per year and all hatcheries with a capacity of at least 1 000 hatching eggs per year are subject to this survey. Numbers on turkeys, geese, ducks, guinea fowls and chicken for mixed meat and laying use will not be published for data protection reasons.
